Superhero Recipe:
(adapted from Run Fast. Cook Fast. Eat Slow. by Shalane Flanagan and Elyse Kopecky)
350 degrees 20-25 minutes 12 muffins
Ingredients:
2 cups of oat flour
1/2 cup rolled oats
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of cinnamon
1 tablespoon of ground flax seed
1 Cup grated peeled, sweet potato
3-4 very ripe bananas mashed
1/3 cup almond butter
1/3 cup maple syrup
1/2 chocolate chips or walnuts (optional)
In a large bowl combine the dry ingredients
in a medium-sized bowl whisk together the sweet potato, bananas, almond butter, maple syrup, chocolate chips
Add wet to dry ingredients, and combine. Spoon batter into muffin tins and bake. Cool then enjoy! :)
